Aah...good ole kessel. I first learned of kessel two years ago, when I attended my first Grosslangheim wine fest. Kessel is...to quote myself "a water filled vat of miscellaneous boiled animal organs". And it is just that. All kinds of diced up, cubed slabs of this and that from...I'm guessing...pig. This includes heart, kidney, liver and skin...because, you know...skin IS an organ. Ewwww.....
