Within the town of Zaandam is a cool open-air museum, Zaanse Schans (http://www.zaanseschans.nl/).  If you are looking to experience what Dutch life was like during the 17th century and check out a few windmills (including the interiors and access to their decks), its worth a visit.  You can see how wooden shoes were made, get a pfannenkuchen (pancake), and some other cool things.  I'm a sucker for windmills, so I enjoy walking around this park.  All buildings and windmills are original to the 17th-18th centuries and were moved here for preservation.
